Ingredients (Serves 2–3)

  • 2 chicken breasts or 4 boneless skinless chicken thighs, sliced thin

  • 1 red pepper, sliced

  • 1 yellow or green pepper, sliced

  • 1 red onion, sliced

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground cumin

  • ½ teaspoon garlic powder or granules

  • Salt and black pepper to taste

  • Pinch of chilli flakes (optional)

  • 1 lime

  • 4–6 small flour tortillas

  • Optional toppings: grated cheese, avocado, sour cream, fresh coriander

Equipment Needed

  • Cadac cooker (griddle, BBQ plate or paella pan)

  • Tongs or spatula

  • Small foil wrap (for tortillas)

Method: How to Make Chicken Fajitas in a Campervan

  1. Heat your Cadac BBQ to medium heat using the griddle plate or paella pan.

  2. Season your chicken: In a bowl or bag, combine sliced chicken, olive oil, smoked paprika, cumin, garlic, salt, pepper, and a squeeze of fresh lime. Let it sit for 5–10 minutes while the Cadac warms up.

  3. Cook the chicken: Place the chicken directly on the hot Cadac plate and cook for 6–8 minutes, turning occasionally until cooked through and golden.

  4. Add the veg: Move chicken to the side (or remove briefly), then add peppers and onions. Cook for 5–7 minutes until soft and slightly charred.

  5. Combine and finish: Mix chicken back in with the veg and cook for another minute. Squeeze the rest of the lime juice over the top.

  6. Warm the wraps: Wrap your tortillas in foil and place on a cool part of the Cadac for 2–3 minutes to warm through.

  7. Serve: Load up your tortillas with the smoky chicken and veg mix, then add your favourite toppings.
