Skillet Sausage & Veg Hash

One-pan, hearty, perfect for breakfast, lunch or dinner

Ingredients (serves 2)

  • 2 good sausages (e.g. pork, chicken, or your favorite)
  • 1 medium potato (or 2 small), diced small
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • Olive oil or cooking oil, 1 tbsp
  • Salt & pepper
  • (Optional) a handful of spinach or chopped greens

Instructions

  1. Heat your pan over medium heat; add oil.
  2. Add the diced potato, season lightly with salt & pepper, let cook for ~5 minutes, stirring occasionally so they brown and begin to soften.
  3. Push potatoes to one side; add sausage (whole or sliced) to the other side, brown on all sides (3–4 min).
  4. Add onion and bell pepper, stir together, cook until onion is translucent and vegetables are soft (another ~5 minutes).
  5. (Optional) Stir in the spinach or greens at the end to wilt (1 minute).
  6. Taste, adjust seasoning, and serve hot.

Notes / Variations

  • If you have smoked sausage or chorizo, it adds flavor without extra seasoning.
  • You can top with a fried egg if you like.
  • Leftovers reheat well in the same pan.
