Chickpea & Veggie Skillet Curry (Vegetarian)

One pan, plant-rich, flavourful

Ingredients (serves 2)

  • 1 can chickpeas, drained & rinsed
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 small carrot, diced
  • 1 garlic clove, minced
  • 1 tbsp curry powder or paste
  • 1 can coconut milk or ½ can coconut + ½ water
  • Olive oil, salt & pepper
  • (Optional) fresh coriander / herbs

Instructions

  1. Heat oil, sauté onion + garlic until soft.
  2. Add carrot + bell pepper, cook ~3 minutes.
  3. Add chickpeas, stir in the curry powder / paste, mix well.
  4. Pour in coconut milk (or mix coconut + water).
  5. Bring to gentle simmer, cook ~5–8 minutes until vegetables are tender.
  6. Adjust seasoning, stir in herbs if using, serve.
