Easy Campervan Meals – Spicy Honey Garlic Chicken Noodles & Creamy Coconut Lentil Curry

Spicy Honey Garlic Chicken Noodles (Meat Eaters)

Perfect for: When you fancy a takeaway-style meal in your van without the cost.

Ingredients (serves 2):

  • 2 chicken breasts, sliced into thin strips
  • 2 nests of quick-cook noodles (egg or rice noodles)
  • 2 cloves garlic, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp chilli flakes (or to taste)
  • 1 tbsp olive oil or sesame oil
  • 1 handful spring onions, chopped
  • 1 handful fresh coriander (optional)

Method:

  1. Heat the oil in a large frying pan or wok.
  2. Add the chicken strips and cook until golden and cooked through.
  3. Stir in the garlic, soy sauce, honey, and chilli flakes. Cook for 2 minutes until sticky.
  4. Meanwhile, cook the noodles in a pan of boiling water (takes about 3 minutes). Drain.
  5. Add the noodles to the chicken pan and toss everything together.
  6. Sprinkle with spring onions and coriander before serving.
