One-Pan Chicken & Mushroom Stroganoff

Suitable for: One-pan hob cooking in a van or motorhome
Ingredients
1 tablespoon olive oil or butter
2 chicken breasts or thighs, sliced
1 small onion, finely chopped
1 garlic clove, crushed
150 grams mushrooms, sliced
1 teaspoon paprika
100 millilitres single cream or plant-based cream
1 tablespoon Dijon mustard
Salt and pepper to taste
Optional: chopped parsley for garnish
Method
Heat the oil or butter in a frying pan over medium heat. Add the chicken and cook for about five to seven minutes until golden and cooked through. Remove and set aside. In the same pan, cook the onion and garlic for three minutes until soft, then add the mushrooms and paprika. Cook for a further five minutes. Return the chicken to the pan, add the cream and Dijon mustard, and stir to combine. Simmer gently for five minutes, season to taste, and serve with rice, pasta or crusty bread.
