Sweet Potato & Black Bean Hash

Ingredients

1 tablespoon olive oil
1 small red onion, finely chopped
1 garlic clove, minced
1 medium sweet potato, diced small
1 teaspoon ground cumin
½ teaspoon smoked paprika
400 grams black beans, drained
Salt and pepper to taste
Optional: fried egg, hot sauce, or avocado to serve

Method

Heat oil in a non-stick frying pan over medium heat. Add the sweet potato and cook for ten to twelve minutes, stirring often, until just tender. Add the onion and garlic, cooking for another five minutes. Stir in the cumin, paprika, and drained black beans. Cook everything together for another five minutes, letting the flavours combine and the sweet potato crisp slightly. Season well and serve as-is, or top with a fried egg or sliced avocado if you have them on hand.
