This halloumi and sweet potato hash is a tasty, filling vegetarian recipe that’s ideal for van cooking. It’s easy to make, satisfying, and full of texture and flavour — all using just a single pan.
Start by heating a little olive oil in a frying pan. Dice one medium sweet potato and cook it over medium heat for ten to twelve minutes, stirring often, until it’s golden and cooked through.
Add one chopped red onion, one minced garlic clove, and one chopped bell pepper. Cook for another five minutes until softened. Season with smoked paprika, salt, and pepper to your taste.
Add 150 grams of cubed halloumi and fry for three to four minutes until golden and crisp on all sides. For a finishing touch, you can add a pinch of chilli flakes or a squeeze of fresh lemon juice. This meal is perfect on its own or served in a wrap for an easy lunch on the go.

1 splash olive oil
1 medium sweet potato (diced)
1 red onion (chopped)
1 garlic clove (minced)
1 bell pepper (chopped)
150 grams halloumi (cubed)
Smoked paprika (to taste)
Salt and pepper (to taste)
Optional: pinch of chilli flakes or fresh lemon juice
Instructions:
Heat olive oil in a frying pan over medium heat.
Add diced sweet potato and cook for 10-12 minutes, stirring often, until golden and cooked through.
Add red onion, garlic, and bell pepper; cook for another 5 minutes until softened.
Season with smoked paprika, salt, and pepper.
Add cubed halloumi and fry for 3-4 minutes until golden and crisp.
Finish with optional chilli flakes or lemon juice. Serve on its own or in a wrap.
