Monster Veggie Quesadilla — Halloween Vegetarian Recipe for Vanlife

Melty cheese, colourful peppers, and beans are sandwiched in a crispy tortilla — then decorated with “monster eyes” made from olives or tomatoes. A perfect Halloween lunch or dinner for your campervan adventures.

Equipment: Frying pan or griddle

Ingredients:

  • 2 large flour tortillas
  • ½ cup shredded cheese (cheddar, mozzarella, or vegan alternative)
  • ½ red and ½ yellow bell pepper, sliced
  • ½ cup cooked black beans or kidney beans
  • 1 tsp olive oil
  • Black olives or cherry tomatoes for “eyes”

Method:

  1. Heat a little oil in a frying pan.
  2. Lay one tortilla in the pan and sprinkle cheese evenly. Add beans and peppers in fun shapes.
  3. Place the second tortilla on top and cook for 2–3 minutes per side until golden and melted.
  4. Slice into triangles and decorate with olive or tomato “monster eyes.”
