Vanlife Recipe: One-Pan Chorizo and Potato Hash (Meat Version)

This simple and hearty one-pan chorizo and potato hash is perfect for vanlife cooking. It’s filling, packed with flavour, and only uses one pan — ideal for campers with limited space and equipment.
To make this dish, you’ll need four small potatoes (you can leave the skins on), 150 grams of sliced cooking chorizo, one red onion (chopped), one bell pepper (chopped), two eggs, a splash of olive oil, salt, pepper, and optional hot sauce for extra heat.
Start by heating the olive oil in a large frying pan. Add the diced potatoes and cook them over medium heat for about ten to twelve minutes until golden and soft, stirring regularly to prevent sticking.
Next, add the chorizo slices and let them cook for three to four minutes until they release their oil and aroma. Stir in the chopped red onion and bell pepper, and continue cooking for another four to five minutes until softened.
Push the mixture to the sides of the pan and crack two eggs into the centre. Fry them to your preferred doneness. Season the whole dish with salt and pepper, and if you like a kick, finish with a splash of hot sauce. Serve straight from the pan for the full campervan cooking experience.

Add the sliced chorizo to the pan and cook for 3-4 minutes until it releases its oil and aroma.
Stir in the chopped red onion and bell pepper. Cook for another 4-5 minutes until softened.
Push the mixture to the sides of the pan, creating space in the center. Crack the two eggs into the middle of the pan.
Fry the eggs to your preferred doneness.
Season the entire dish with salt and pepper to taste. Add a splash of hot sauce if you want extra heat.
Serve straight from the pan for a true campervan cooking experience.
