Greek Yogurt & Grilled Peach Parfait

This no-cook van life breakfast is fresh, fruity, and super easy to prepare. Grilling the peaches adds warmth and flavour without needing a full kitchen setup. Perfect for sunny mornings and slower starts.

Ingredients

1 ripe peach, halved and pitted
1 tablespoon honey or maple syrup
1 cup Greek yogurt (plain or vanilla)
1 tablespoon granola or crushed nuts
A few fresh mint leaves (optional)

Method

Heat a dry frying pan over medium heat. Place the peach halves cut-side down and cook for 3–4 minutes until caramelised and lightly browned. Remove from heat. In a bowl or jar, spoon in half of the Greek yogurt, layer with a peach half, then repeat. Drizzle with honey or syrup and top with granola and mint. Serve immediately.
