Breakfast Burrito Bowl (for Meat Eaters)
This hearty breakfast burrito bowl gives you all the flavour of a full wrap, but without needing to roll or grill anything. It’s one pan, mess-free, and ideal for meat-eaters who want a big breakfast without too much effort.

Ingredients
1 tablespoon olive oil
2 sausages (pork, chicken or veggie if preferred), sliced
1/2 red pepper, chopped
1 spring onion, sliced
1/2 tin black beans, drained and rinsed
1 egg
1 handful of grated cheddar or crumbled feta
Optional: splash of hot sauce or dollop of salsa
Method
Heat the olive oil in a pan over medium heat and add the sliced sausages. Fry until browned and cooked through. Add chopped red pepper and cook for another 2–3 minutes until softened. Stir in the black beans and spring onion, cooking until warmed through.
Push everything to the side of the pan and crack in the egg. Scramble it directly in the pan or cook it as a fried egg on top. Once the egg is ready, give everything a gentle mix or layer in a bowl with cheese on top. Add hot sauce or salsa if desired.
