Vegetarian Recipe: Spiced Chickpea Flatbreads

Vegetarian Recipe: Spiced Chickpea Flatbreads

Ingredients

For the chickpeas:
1 tablespoon olive oil
1 garlic clove, chopped
1 teaspoon ground cumin
1 teaspoon smoked paprika
400 grams chickpeas, drained
Juice of half a lemon
Salt and pepper to taste

For the flatbreads:
100 grams plain flour
50 grams natural yoghurt (or plant-based alternative)
Pinch of salt
Water as needed

Method

Start by mixing the flour, yoghurt and salt in a bowl. Add a splash of water if needed to form a soft dough. Divide into two and roll or press into flat rounds. Dry fry the flatbreads in a hot non-stick pan for two minutes per side until golden and cooked through. Set aside. In the same pan, heat olive oil and cook the garlic gently for one minute. Add cumin, paprika and chickpeas, cooking for five minutes until warmed through and slightly crisp. Add lemon juice and season to taste. Serve chickpeas piled onto flatbreads with yoghurt or hot sauce if available.
