Ingredients
2 chicken breasts, diced
1 tbsp olive oil
1 garlic clove, crushed
1 lemon (juice and zest)
1 tsp dried oregano
1 tsp dried thyme
1 courgette, sliced
1 red pepper, chopped
1 handful cherry tomatoes, halved
Salt & pepper to taste
Step-by-Step Instructions
Step 1 – Cook the Chicken
Heat olive oil in a large frying pan over medium heat. Add the diced chicken and cook for 5–6 minutes until golden on the outside.
Step 2 – Add Flavour
Stir in the garlic, oregano, thyme, and lemon zest. Cook for one minute to release the aromas.
Step 3 – Add the Vegetables
Tip in the courgette, red pepper, and cherry tomatoes. Cook for 8–10 minutes until the vegetables are tender and the chicken is cooked through.
Step 4 – Finish with Lemon
Squeeze the lemon juice over the dish, season with salt and pepper, and serve immediately.
