Vegetarian One-Pan Lemon Herb ‘Chicken’ & Veg

A Meat-Free Take on a Vanlife Favourite

Eating vegetarian while travelling is easier than ever. This vegetarian lemon herb ‘chicken’ and veg recipe uses plant-based chicken pieces, giving you all the flavour of the classic dish without the meat. It’s just as quick, healthy, and perfect for a campervan kitchen.


Ingredients

  • 200g vegetarian chicken-style pieces (Quorn or similar)

  • 1 tbsp olive oil

  • 1 garlic clove, crushed

  • 1 lemon (juice and zest)

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 courgette, sliced

  • 1 red pepper, chopped

  • 1 handful cherry tomatoes, halved

  • Salt & pepper to taste


Step-by-Step Instructions

Step 1 – Cook the Plant-Based Chicken

Heat olive oil in a frying pan over medium heat. Add the vegetarian chicken pieces and cook for 3–4 minutes until lightly golden.

Step 2 – Add Flavour

Stir in the garlic, oregano, thyme, and lemon zest. Cook for one minute.

Step 3 – Add the Vegetables

Add the courgette, red pepper, and cherry tomatoes. Cook for 8–10 minutes until the vegetables are tender.

Step 4 – Finish and Serve

Squeeze lemon juice over the top, season to taste, and serve hot.
