RidgeMonkey Vegetarian Pizza Recipe (No Oven Needed)
Prep Time: 5 minutes
Cook Time: 8–10 minutes
Serves: 1–2
Equipment: RidgeMonkey sandwich toaster, hob, spatula
Ingredients
1 tortilla wrap or flatbread (for the base)
2 tablespoons tomato passata or pizza sauce
50 grams grated mozzarella or plant-based cheese
3–4 slices of roasted red pepper (from a jar works well)
2 tablespoons sweetcorn (tinned or vacuum-packed)
2–3 slices red onion, finely chopped
½ teaspoon dried oregano
Optional: olives, cherry tomatoes, spinach, pesto drizzle
Method
Preheat the RidgeMonkey on low heat for one to two minutes with the lid open. While it heats, spread the tomato sauce over one side of the tortilla wrap. Sprinkle over the cheese, then top with red pepper, sweetcorn, red onion, and any optional toppings. Finish with a pinch of dried oregano.
Place the pizza into the RidgeMonkey carefully, sauce side up. Close the lid gently and cook on a low flame for four to five minutes. Flip the RidgeMonkey and cook the other side for another three to four minutes, or until the base is crisp and the cheese has melted.
Slide out onto a plate or board, slice, and serve hot.
Why It Works for Vanlife
This recipe keeps things simple and quick, with no need for an oven or complicated prep. Tortilla wraps act as a perfect crisp base, and all toppings are vanlife-friendly — especially jarred or tinned options that last without refrigeration.
Tips for Best Results
Don’t overload the base — keep toppings light for quicker cooking.
Use low, steady heat to avoid burning.
Add a drizzle of pesto or hot sauce for extra flavour after cooking.
Try plant-based cheese for a vegan version.
