Ingredients

1 tortilla wrap or flatbread (as your pizza base)
2 tablespoons tomato passata or pizza sauce
50 grams grated mozzarella
2–3 slices cooked pepperoni or salami
2 tablespoons cooked bacon or ham (pre-cooked or from a ready pack)
½ teaspoon dried oregano
Optional: sliced red onion, chilli flakes, extra cheese


Method

Place your RidgeMonkey on a low to medium flame and preheat for 1–2 minutes with the lid open. While it warms, spread the tomato passata evenly over one side of the tortilla wrap, covering almost to the edge. Sprinkle the grated mozzarella on top, followed by the pepperoni, bacon or ham. Add any optional toppings and finish with a pinch of dried oregano.

Carefully place the prepared pizza into the RidgeMonkey, sauce side up. Close the lid gently — you don’t want to squash it flat, just hold the heat. Cook on low heat for about 4–5 minutes, then flip the RidgeMonkey and cook the other side for another 3–4 minutes. The cheese should be melted, and the base golden and crisp.

Remove carefully with a spatula, slice, and enjoy immediately.
